      Íàèëó÷øèå óñëîâèÿ ïîâåäåíèÿ 220-260°Ñ è (25-60)*10  Ïà (áåçðåàêòèâíîå ðàñùåïëåíèå æèðîâ). Ïðàêòè÷åñêè ãèäðîëèç æèðîâ ïðîèçâîäÿò èëè ïåðåãðåòûì ïàðîì, èëè íàãðåâàíèåì â ïðèñóòñòâèè ñåðíîé êèñëîòû èëè ùåëî÷åé. Êîíòðîëèðóþò ãèäðîëèç ïî Ê×.[   ]

     Ñ ãèäðîëèçîì ãëèöåðèäîâ òåñíî ñâÿçàíî òàêîå ñâîéñòâî æèðîâ êàê ïðîãîðêàíèå. Ðàçëè÷àþò äâà òèïà ïðîãîðêàíèÿ: ãèäðîëèòè÷åñêîå è îêèñëèòåëüíîå. Ãèäðîëèòè÷åñêèå èçìåíåíèÿ â æèðå ïðîèñõîäÿò ïîä äåéñòâèåì ôåðìåíòîâ è ìèêðîîðãàíèçìîâ è ïðèâîäÿò ê ïîÿâëåíèÿ ñâîáîäíûõ æèðíûõ êèñëîò. Åñëè ýòè êèñëîòû îáëàäàþò êîðîòêîé öåïüþ, òî æèðû ïðèîáðåòàþò ïðîãîðêëûé çàïàõ è âêóñ. Ýòîò òèï ïðîãîðêàíèÿ õàðàêòåðåí äëÿ êîðîâüåãî ìàñëà. Îäíàêî íàèáîëåå ðàñïðîñòðàíåí îêèñëèòåëüíûé òèï ïðîãîðêàíèÿ. Îêèñëåíèå ìîëåêóëû æèðà ïðèâîäèò ê  îáðàçîâàíèþ ðÿäà àëüäåãèäîâ è êåòîíîâ ñ êîðîòêîé öåïüþ, êîòîðûå èìåþò íåïðèÿòíûé çàïàõ è âêóñ. Äëÿ ýòîãî íåîáõîäèìî ïðèñóòñòâèå êèñëîðîäà âîçäóõà, à òàêæå ïîâûøåííàÿ òåìïåðàòóðà, ñâåò, âëàæíîñòü.  íàñòîÿùåå âðåìÿ äëÿ áîðüáû ñ ïðîãîðêàíèåì æèðîâ, ïîñòóïàþùèõ â ïðîäàæó, èñïîëüçóþò ñïåöèàëüíûå âåùåñòâà, íàçûâàåìûå àíòèîêñèäàíòàìè. Ýòè ñîåäèíåíèÿ îáû÷íî ÿâëÿþòñÿ ïîëèôåíîëàìè, õèíîíàìè èëè êàòåõèíàìè. (ïîäðîáíåå - ñõåìà îêèñëåíèÿ æèðîâ)[   ]

     Îìûëåíèå. Ïðè âçàèìîäåéñòâèè ñ ùåëî÷àìè æèðû  ãèäðîëèçóþòñÿ ñ îáðàçîâàíèåì ñîëåé âûñîêîìîëåêóëÿðíûõ êèñëîò, íàçûâàåìûõ «ìûëàìè».

     Ïåðåýòåðèôèêàöèÿ. Ãëèöåðèäû â ïðèñóòñòâèè êàòàëèçàòîðîâ (ìåòèëàò è ýòèëàò íàòðèÿ, íàòðèé, êàëèé, åäêèé íàòð) ñïîñîáíû îáìåíèâàòüñÿ (âíóòðè- è ìåæìîëåêóëÿðíî) àöèëàìè:

     Ïåðåýòåðèôèêàöèÿ ïðèâîäèò ê èçìåíåíèþ ñâîéñòâ æèðîâ è ìàñåë è èñïîëüçóåòñÿ äëÿ öåëåíàïðàâëåííîãî óëó÷øåíèÿ áèîëîãè÷åñêèõ è ðåîëîãè÷åñêèõ ñâîéñòâ æèðîâ (ïëàñòè÷íîñòü, âÿçêîñòü è ò. ä.) Íàèáîëåå ïåðñïåêòèâíûì â íàñòîÿùåå âðåìÿ ÿâëÿåòñÿ ôåðìåíòàòèâíîå íàïðàâëåíèå.[     ]

     Àëêîãîëèç. Ãëèöåðèäû ïðè íàãðåâàíèè ñî ñïèðòàìè îáðàçóþò ñîîòâåòñòâóþùèå ýôèðû æèðíûõ êèñëîò ñ âûñâîáîæäåíèåì ãëèöåðèíà.

     Àöèäîëèç. Ïðè íàãðåâàíèè òðèãëèöåðèäîâ ñî ñâîáîäíûìè æèðíûìè êèñëîòàìè äî 250-300°Ñ ïðîèñõîäèò îáìåí àöèëîâ:
